i've been working on refining my culinary skills for the past month or so. i don't know what tempted me to do it, i just kind of felt like it. perhaps i wanted to learn to cook for myself when i get my own apartment, or to cook for family dinners, maybe to impress a girl into dating me. i really don't know but i really like the sound of the 3rd reason!

now, i didn't just dive right into cooking or anything. i lost my cooking virginity a long time ago. i've prepared small dishes in the past with satisfactory success and i just wanted to elaborate on it this time around or something. the thanksgiving and christmas holiday weekends were when things started to pick up for me. i am currently watching cooking shows religiously, researching recipes, and watching famous chefs on youtube.

i want to attend a culinary school but as far as a career choice, i don't think i could do it. chefs work longer hours and more days than i do. i doubt they get paid sick leave/vacation or get as much holidays off as i do. i wonder if there are benefits compared to government jobs?

the dishes i prepared over the holidays were all first time attempts and they all come out pretty well. i cooked a lot of salmon dishes, mainly because i had a shitload in stock so i had to put them to good use. so without further ado i present to u all my dishes.

Herb Crusted Lamb Racks:

this was my first attempt and i fucked up. i accidentally cooked it the wrong side down so the crust looks kinda retarded and all the juices arent supposed to be there. my 2nd lamb rack that i cooked came out a million times better looking but i didn't take pics =\


Herb Crusted Salmon on Vermicelli Pasta:

i wanted to test out the herb crust on the lamb with a salmon dish. it was alright, nothing amazing like it was with the lamb. the sauce for the pasta was basically impromptu and it worked well.


Crispy Salmon with Crabmeat Mashed Potatoes



Fluffy Scrambled Eggs with Salmon on the side:

i really liked the eggs on this one. the texture felt very creamy and melted in my mouth. i used a different method to scrambled them and it came out completely different compared to the shit u get at IHOP or Dennys or regular scrambled eggs u make at home.

that looks like a good PB&J sandwich. u didnt skimp out on the jelly like most people do! haha.

i got most of my dishes from watchin my favorite chef Gordon Ramsay. the herb crusted salmon on pasta was experimental. i do experiment once in a while but i'm not really a big fan of freestyle cooking like Iron Chef stuff. i like workin with shit i know will taste good.

I want to start cooking/taking cooking classes at some point, I like salmon with eggs... Ate that a lot up in Alaska. Good stuff

i was considerin culinary schools but the top 2 schools cost a shitload. Culinary Institute of America is like $8.6k a semester and Le Cordon Bleu is like $40k a year, which is basically the same price as Harvard or Yale.

i've seen an episode of hells kitchen where ramsay helps a restaurant get back on its feet, only to return 6 weeks later to find that it had shut down.
